Duck Gizzards Confit (gesier de canard confit)

Chef's suggestion: The perfect salade come with gizzards confit on top of it
recepes : serving 1
- 2 confits duck gizzards
- 4 slices of our smoked duck magret
- 50 gr of our foie gras
- pinions and walnuts
- mixed salads
- 1/2 tomato
- vinaigrette
- white bread croutons cooked in butter
how to do it:
- roast the gizzard in their fat in a pan. Lay a bed of salad in a plate and surround it with tomato slices.
- Lay the slices of magret as well, sprinkled with some walnuts and pinions and the slice of foie gras.
- Before serving, top with the cut warm gizzards.
- Pour some vinaigrette over the salad. Sprinkle with goldened croutons and chopped chives.
- NOTE:
- You can also add a manchon of confit duck, toasts of rillettes, pieces of Bayonne ham.
