6 garlic cloves, degermed
1 egg yolk
400 gr. olive oil
Salt, pepper

DIRECTIONS
In a mortar, crush the garlic cloves. Add salt, pepper and blend the egg yolk, crush until the mixture thickens. Gradually add olive oil, stirring in a circular motion to thicken the sauce like a mayonnaise

ADVICE
Can be served with cold meat, cold fish, “Bourride”, steamed vegetables or hard boiled eggs.
