PUMPKIN SOUP
INGREDIENTS
2 kg. pumpkin flesh
2 onions
2 apples
250 gr. chicken stock
1 teaspoon nutmeg
2 teaspoons cumin
1 teaspoon salt
250 gr. water
250 gr. milk
3 tablespoons heavy whipping cream
3 tablespoons honey
Pepper from the mill, coarse salt
2-3 sprigs of chives

METHOD
Chop pumpkin, onions and apples. Place in a pot.
Add chicken stock, water, milk, honey, nutmeg, cumin, salt and pepper. Simmer, cover and cook over medium heat for 35 to 40 minutes until the pumpkin gets tender.
Pour into the mixer.
Add the cream and check seasoning.
Sprinkle the soup with the snipped chives.
Serve very hot.
