INGREDIENTS 1 kg. red, green and yellow peppers
1 lemon, thinly sliced
4 garlic cloves, peeled
200 gr. olive oil
Salt, pepper
PICKLED PEPPER METHOD Place the whole peppers on a cookie sheet and grill them in the broiler, turning them until they darken and start to crack. Remove from the broiler and let them cool.
Finely chop the garlic cloves.
Peel the peppers and cut them in half, remove the seeds and the inside flesh.
Arrange in a dish with the garlic cloves and the lemon slices.
Add some pepper from the mill, a pinch of coarse salt and sprinkle with olive oil. Marinate for 24 hours before serving.
