INGREDIENTS
500 gr. eggplant
2 tablespoons sesame seeds
2 garlic cloves
Coriander
1 sprig of thyme
1 bay leaf
Coarse salt, pepper
Olive oil

 


















EGGPLANT CAVIAR

METHOD
Clean, wipe the eggplants and remove the stalks. Slice the eggplants in half and place them in a dish. Cut the flesh with a knife to let the oil penetrate. Sprinkle with olive oil, cut the garlic cloves in quarters, place them on top of the eggplants, sprinkle with the coriander, the thyme, the chopped bay leaf, a pinch of coarse salt and some pepper from the mill.
Cook in the oven at 180°C until the eggplants are golden brown.
Remove from the oven and let cool. With a spoon, remove all the inside flesh and mix it with the sesame seeds.
Serve well chilled.

Les sortir du four, attendre qu’elles refroidissent un peu, gratter tous les intérieurs à l’aide d’une cuillère pour récupérer toute la chair.
Mixer la chair avec les graines de sésame.
Servir le caviar aubergine bien frais.

Serve with garlic croutons.
